Hello and welcome to this weeks Food Friday. It’s raining and miserable out there today š So, I fancied something warm and comforting for dinner tonight. Cheesy potato and broccoli bake is yummy and just hits the spot!
You will need:
1 large head of broccoli (chopped into florets)
3 medium potatoes (chopped)
1 medium onion (chopped)
1 garlic clove (chopped)
1 small green chilli (if you want add a spicy kick)
1 tbsp olive oil
25g margarine/butter
50g of cheddar cheese (grated) for the cheese sauce
Additional cheese to top before putting in the oven
400ml of milk
25g of plain white flour
1 tsp English mustard
Salt and black pepper for seasoning

Directions:
1. Preheat the oven to 180c/350f/Gas Mark 4.
2. Cook the potatoes for 10
minutes, or until tender.

3. Meanwhile, heat 1 tbsp oil in a frying pan and quickly fry off the onion, garlic and chilli until slightly golden.
4. Cook the broccoli for 3-4
minutes, or until tender.

5. To make the cheese sauce:
- Melt the margarine/butter in a saucepan.
- Stir in the flour and cook over a medium heat for approx 1 minute.
- Turn down the heat and add as much milk as the mixture
can absorb to make a paste. Gradually stir in the remaining milk.- Turn up the heat to bring the sauce to the boil, stirring
constantly, until the sauce thickens.- Stir in cheese and mustard.
- Season with a little salt and black pepper.
6. Pop the potatoes, broccoli and fried onions, garlic and chilli mix into an ovenproof dish and add the cheese sauce. Sprinkle cheese over the top and bake in the
oven for 20/25 minutes, or until the cheese is golden brown.
Serves: 2 as a main course.

Here's another I'm going to try! I love cooking but have lost my mojo recently & I'm trying to get it back! I love trying new things & we eat vege at least once a week so this will be a great one to try! Ax

This does sound delicious, I shall make it one day but without the chilli. I found a nice recipe on allrecipes for a broccoli and cheese pasta bake made with chicken soup, which is nicer than it sounds!
