Food Friday: Roasted Vegetables & White fish in balsamic vinegar with Hot Paprika potatoes

Hey guys and welcome to Food Friday! Tonight we are going for a party in the mouth taste frenzy! Using white fish can save you a fortune compared to the likes of salmon, but we are not compromising on taste here 🙂

I popped to my local food market and they were selling “Whitey” for 4 fillets for £3 on the fish stall. The best cheapest white fish you can source is ideal for this dish.

You will need: 
1 large/2 medium red onions
1 red pepper
1 yellow pepper
2 courgettes
1 red onion
10 cherry tomatoes
4 cloves of garlic
Sea salt
Freshly ground black pepper
Olive oil
White fish
Balsamic vinegar
New potatoes
Hot Smoked Paprika
Tomato puree
Knob of butter
1. Preheat the oven to 200°C/400°F/gas 6.
2. Chunky chop all of the vegetables, place into a large oven proof dish and drizzle with olive oil and balsamic vingear, a pinch of salt and cracked black pepper. Place in the oven for around 30-40 minutes, or until tender.
3. Prepare the fish by placing in tin foil, drizzle with olive oil and fold the tin foil into parcels. The fish will only take around 15-20 minutes, but ensure cooked thoroughly.
4.  Boil the potatoes in a pan over medium-high heat and bring the water to a boil. Once boiling, reduce the heat to simmer. Check the potatoes after 5 minutes, depending on the size, most potatoes will be done in 10 to 20 minutes.
5. Once the potatoes are cooked, it’s time to make the paprika and tomato sauce. Add a knob of butter, tomato puree and a good shake of paprika.
6. Once the vegetable and fish are cooked, serve with a really generous drizzle of balsamic vinegar. Plate up the potatoes and enjoy!
