Food Friday: Salmon salad and potatoes in a spicy tomato sauce

Hello and welcome to Food Friday! Tonight on the menu we have salmon salad and potatoes in a spicy tomato sauce courtesy of my lovely friend Foo.  Yummy!

To create this simply delicious rainbow of colours, just follow these
simple steps:
1. First of all pre-heat the oven to  200c/400f or
gas 6.
2. Prepare your salmon fillets for cooking by putting them on a
sheet of tinfoil, drizzle with olive oil and a squeeze of lemon. Put the salmon
onto cook for around 15 to 20 minutes until cooked thoroughly.
3. Meanwhile prepare your salad. We decided to eat a rainbow of
colours, as not only is it so colourful, it’s packed with nutrients. 
       In the salad:
  • Red cabbage
  • Chalottes
  • Grated carrot
  • Avacado
  • Tomatoes
  • Raddish
  • Apple or strawberries 
  • Basil leaves
  • Balsamic vinegar
  • Squeeze of lemon

4. Boil the potatoes in a pan over medium-high heat and
bring the water to a boil. Once boiling, reduce the heat to simmer. Check the potatoes after 5 minutes, depending on the size, most potatoes will be done in 10 to 20 minutes.
5. Once the potatoes are cooked, it’s time to make the paprika and tomato sauce. This is my friend’s own yummy little creation! Chop garlic, add a knob of butter, tomato puree
and a good shake of paprika. It really is delicious and so colourful.
6. Once the salmon is cooked, add it to the salad and potatoes. Season with cracked
black pepper and enjoy!
