Food Friday: Spicy Spaghetti Bolognese Veggie Style

Hello and welcome to Food Friday! Tonight on the menu I
thought we could try a little twist on the simple old favourite, Spag Bol.

You will need:
Quorn mince
Onion
Garlic
Chilli
A tin of chopped tomatoes
Tomato purée
Mixed peppers
Mushrooms
Tabasco sauce (few shakes to personal taste)
Generous splash of red wine
Chopped parsley
Dash of paprika
Spaghetti
I love Spag Bol as it’s basically a throw it all into ‘one
pot’ then leave it to cook kind of dish. The fact it’s made with Quorn also means it’s super healthy and low fat!Just follow these steps for a quick, simple and totally delicious meal tonight:

1. Chop onions, garlic and chilli and dry fry for a minute or
two. This really brings out the chili kick!
2. Add the Quorn mince, chopped tomatoes, tomato purée, mixed peppers, mushrooms and Tabasco sauce (few shakes to personal taste). Then add a generous splash
of red wine and some chopped parsley, a dash of paprika. Then season with a
little cracked black pepper.
3. Stir all the ingredients together, put the lid on and leave
to cook on a low heat. The longer you leave the sauce, the better it tastes, so I
usually leave for about 30 minutes, if not longer. Don’t forget to stir occasionally and
add a little water if it starts to dry out.
4. Pop the spaghetti on to boil, then simmer for around 8-10 minutes depending on required taste.5. Serve with a little garlic bread for that extra touch. Yum!
