Homemade Spicy Tomato, Carrot and Basil Soup

What better way to warm up winter days than with a spicy soup. This yummy healthy spicy tomoato, carrot and basil soup definitely hits the spot 🙂 

You will need: 

2 tablespoons of olive oil
1 red onion (finely chopped)
1 clove of garlic (sliced)
1 chilli (chopped)
1 tin of chopped tomatoes 
1 packet of passata
2 medium carrots
1 teaspoon Worcestershire sauce
A generous squeeze of tomato puree 
1 vegetable stock cube 
25ml of water 
Salt and pepper to taste 
Fresh basil 

Directions: 

1.      
Heat the oil in a large pan. 
2.      
Fry the onions until softened over a medium
heat. Add the garlic and chilli and fry for another minute.
3.      
Add all the other ingredients except for the
fresh basil. 
4.      
Bring everything to the boil, then turn down the
heat and cook on a low simmer for about 35 to 40 minutes. Turn off the
heat. 
5.      
Blend the soup either in a blender, food
processor or hand held blender. 
6.      
Rip up the basil leaves and sprinkle over the
top.
7.      
Serve with a chunk of warm bread dipped in
olive oil.

    I'd like to try this minus the chilli. I'm not a fan of carrot soup on its own but combined with other ingredients I like it. Are you getting back into blogging now then Helen? xx

    Thanks Amy – it's proper soup weather isn't it!. Are you all set for Christmas? I'm the same with carrot soup on its own. I'm terrible I virtually put chilli and garlic in everything 🙂
    Yes, I missed blogging so much and I have finally managed to get myself into a routine with studying now, so I can spend time getting back into the blog world 🙂 H xx
